Midweek Meander #17: Breakfast Meal Prep

Breakfast meal prep has been part of my weekly routine for about 10 years now. Honestly, I don’t know how I would eat as healthy of a breakfast without it. We always hear that breakfast is the most important meal of the day. I truly believe that; however, for many of us it is the most rushed meal of the day.
Whether you are an early bird workout person like me or a person that prefers to sleep as long as possible in the morning breakfast meal prep is something that you should try. I promise that it will make your day off to a better start in oh so many ways.
Studies have shown that eating a healthy breakfast helps kickstart your metabolism, helps you to have better concentration, and can help lower “bad cholesterol” among many other things. Now, I don’t know about you, but those 3 things are BIGGIES in my life. You can read even more benefits about eating a healthy breakfast here.

I love to keep one or two muffins in this cake plate on the countertop. Honestly, I think it looks pretty and it keeps them fresh for a few days. The rest of the batch is in the freezer so I can get them out as I need them.

When I Eat My Main Breakfast
So those of you who know me well, know that I am an early riser, early workout person. I break my fast with a very small amount of protein and fat before I go to the gym. That just sets my body up to burn more fat and develop more lean muscle which is what I am all about. I eat my main breakfast after I come home from the gym. Yep, that’s when I eat my delicious carbs with more protein. So now you are wondering what some of my favorite things are to meal prep for breakfast.
Before I share some of my favorite recipes, I thought I would share what types of lean protein I pair with them. We have to make sure that we get enough protein in as well.
- A simple protein shake. Yes, just some vanilla protein powder (this is my favorite vegan powder), some almond milk, water, and ice.
- A few slices of turkey bacon
- A couple of egg whites. If I have time I will cook eggs, but I always keep hard boiled eggs in the frig for a quick protein source.

I will be honest. Looking for new and interesting recipes is something that I love to do I have a few websites/Pinterest accounts that I love to peruse. Honestly, they can be like going “down a rabbit hole” for me. I can just get lost and before I know it 30 minutes has gone by. So here are some of the gluten free, dairy free recipes that I have been prepping lately. Click on the name of the recipe and it will take you to the website. where I found the recipe. Trust me, when you see the photos of their recipes your mouth is going to start watering.
