Who Doesn’t Love a Heart Healthy Muffin?
Who doesn’t love a muffin with a cup of hot cocoa, coffee or tea on a chilly day? A heart healthy muffin option that is tasty is even better in my mind for a mid-afternoon snack.

One of my favorite snacks is a protein shake of some sort and a healthy muffin. A few years ago I was diagnosed with oodles of food sensitivities and had to give up over 40 foods for six months. Included in the list was gluten, dairy, wheat, soy, and eggs. How was I ever going to have a muffin or any type of sweet treat for that matter? Vegan recipes to the rescue.
Yes, you can make muffins and many other items that call for eggs with flax seed and water. I promise that you will not be able to tell the difference. I tried several recipes before I found a vegan food blogger that had great recipes and photos that just made your mouth water for her creations.. For my afternoon snack, I make a vanilla vegan protein shake with Plantfusion Vanilla Bean Protein powder and heat up one of these muffins and am totally satisfied. As a disclaimer, I do my best every day to eat a totally balanced diet that is rich in vegetables and fruits. Thus, I do not follow any particular “diet”. I just avoid the many foods that my body doesn’t like.
I encourage you to try a few vegan recipes. You might really like adding them into your diet.
