My Favorite Spring Salads

Today I thought I would share some of my favorite spring salads with you. With warmer temps and longer days my cooking habits change. Soups and other warm comfort foods are now in the back of my mind. It’s time for salads, lighter dishes, and fresh seafood. The other major shift in my cooking methods is less items in the oven and more things out on the grill. Fewer pots and pans equals less kitchen clean up is always a good thing in my mind.
My favorite spring salads include protein and healthy fats. I always have a good mix of protein and healthy carbs at every meal and snack. If you are a purist, please feel free to take the protein away or eat it separately. All of us have our preferences.
The first salad is one that my husband requests over and over. It is one of our favorite weekend lunches.

A shrimp and avocado theme is happening here. This spring salad is one that I will serve when I have a friend or two over for lunch. As you can tell from the picture it plates up beautifully.

This is probably my very favorite spring and summertime salad. I make this recipe for me, myself, and I and have it over a few days. To change things up I will eat this spring salad on a gluten free wrap instead of greens.
