Here’s some squash recipes for all the the varieties of squash that we are now seeing in the grocery. Most people have pumpkin on their minds this time of year, but I am all about squash. I actually eat it year round, but this time of year there are so many more choices. Last month I was all about apple recipes which you can read by clicking here and by November we should be ready to eat soups and stews on a regular basis.
When I am planning meals for the two of us I always like to have a green vegetable and a starch. Lately I have not been able to eat many grains or potatoes so squash in many variations has been on the table a lot lately. I also like to prepare a good sheet pan of vegetables and squash and then I reheat them for myself at lunch. It’s nice to have something warm as the temperatures get cooler instead of a salad.
Why I Like to Eat Squash
- High in fiber, which aids in digestion.
- Squash is a good source of magnesium, calium, iron, and B6.
- It’s easy to prepare and pairs so well with roasted meats which I love to cook in the cooler months.
Tips for Preparing Squash
I must agree that squash is not always the easiest thing to cut and peel. Once you you figure out a few trick and tips you won’t think twice about preparing it.

Squash Recipes I Can’t Wait to Make
For the most part these are quite healthy recipes. Many times I swap out the type of oil or I substitute Brown sugar Splenda blend for brown sugar, just because of my food preferences. I just couldn’t resist the Half Baked Harvest recipe as a splurge. Sometimes you just gotta really enjoy food. In the case of pasta, I always switch out to gluten free versions.
